Cheesy Chips

Remember when I went all crazy and cut out ALL dairy?
 
Well, after Livie' last OGTT test, I realized something:
 
I CANNOT CONTROL WHETHER OR NOT SHE GETS TYPE 1 DIABETES.
 
Let me say that again...
 
I CANNOT CONTROL IT.
 
I'm not going all crazy and pouring cow's milk down their throats.We still do almond milk and daiya cheese and soy/coconut yogurt and ice cream. But I have loosened up and allowed dairy back into my house...mostly in the form of
 
CHEESE !!!
 
Do I think cheese is good for you? Heck no. But neither is breathing our polluted air, using plastic products, watching TV or having a pancreas that doesn't work. So there ya go.
 
One of my girls' favorite cheese treats is something we call
 
CHEESY CHIPS
 
They will literally sit on the couch and chant:
 
CHEESY CHIPS! CHEESY CHIPS! CHEESY CHIPS!
 
while waiting for these little gems to come out of the oven.
 
So, without further ado, here's the ridiculously easy, why-didn't-I-think-of-that recipe for
 
CHEESY CHIPS
(from George Stella's Eating Stella Style Cookbook)
 
Ingredients:
  • Cheddar Cheese. I prefer Medium Tillamook. I don't know why but I think it makes superior cheesy chips
Instructions:
  • Preheat oven to 400F
  • Cut one slice of cheese into 16 small pieces. This is much easier if you buy the pre-sliced cheese versus the block. Each piece is slightly bigger than a nickel.
  • Place cheese on  baking sheet - line with parchment paper or not. Depends on how non-stick your backing sheet is.
  • Bake for between 5 to 7 minutes. Ella is an expert at identifying the exact moment of when the cheesy chips are ready - right after they stop bubbling but right before they get too crispy
  • Pull 'em out of the oven and immediately scoop them off and transfer them onto a paper towel. If you let them sit for too long, they will start sticking and then you'll be left with a big mess.
  • Let your kids have at it.

  1. Oh my...I love this idea! We love our cheese in our house too! I buy it in bulk at BJ's all the different cheese sticks and baby belle is Natalie's favorite (expensive!).

    I read your previous post too and at the time didn't think anything of the almond milk. I have recently stopped the soy milk that my kids were drinking for various reasons and started them on almond milk. (I am worried about something with my daughter so my google research showed to stop soy.) My son (non-t1d) is drinking the vanilla flavored. I bought the unsweetened chocolate for Natalie and quickly realized it needs some sweetener so I added splenda...which seems weird to do to milk! What flavor do you buy for Ella and I assume you just bolus for it? Just curious why your pediatrician doesn't like the almond milk? My kids never had cows milk cause Jacob was allergic when younger and now don't see the need to introduce it considering some say there might be a link to t1d. I can relate to this post and trying do everything to stop t1d as well as other related issues. I'm sure this time of waiting has been so difficult...hang in there, you are doing great with your girls.

    1. Livie drinks the vanilla flavored and Ella drinks the Original (but NOT the unsweetened). The Original is 8 carbs per cup and she usually only drinks 1/2 cup at a time. The best is to mix it with Walden Farms Chocolate syrup (0 carbs) for either cold chocolate milk or warm hot cocoa. SO GOOD. Also, have ever tried So Delicious chocolate coconut milk? It's 9 CHO for 6.5 FL OZ and it comes in lunch-size boxes so I toss one in her lunch or snack almost every day. It's good cold or hot, too. My pediatrician just really feels like they need cow's milk to get calcium...I disagree.

    2. Thanks so much for the info! We have hershey's sugar free syrup which she loves, so I could add that if she doesn't like the flavor (I have some original in the fridge now). I think the syrup has a nasty aftertaste, but she doesn't. I'm going to look for the Walden Farms brand and the So Delicious milk....that sounds awesome! Well our Ped thinks soy is just wonderful, but there is a lot of controversy with it and I just want to be done with it because of a few concerns I have with both kids. Almond milk has 45% calcium which is more than cows milk! I have been buying the lower carb Trop 50 OJ for my son cause it has 30% calcium...he might as well have that than cows milk! Also, two cheese sticks have same amount of calcium one cup of cows milk. There are so many other foods to get calcium from rather than cows milk. I feel like there isn't anything safe to feed our kids some days! Thanks again for the info!
